Recipe: Yogurt Blueberry Bread

So sometimes I semi-create my own recipes. I don't know how I do it, really. Sometimes it's a disaster and sometimes it's delicious. This time it just happened to be delicious!

Here's what you'll need:

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plain reduced fat yogurt
- 1 cup sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 1/2 cup frozen blueberries

Preheat your oven to 350 degrees. Grease your pan and line the bottom with a light layer of flour.

Next, mix together you flour, baking powder and salt in one bowl:

In another bowl, whisk together the yogurt, sugar, eggs, vanilla and oil:

Slowly whisk the dry ingredients into your batter:

Add your blueberries, making sure they're well mixed in.

Bake for 50 minutes.

Your bread will look brown and not-so-pretty... but I promise it tastes delicious!
